Kerri has been invited to submit a recipe for an International Cookbook!

Sounds exciting, but it's really just her WHO working group doing an online project, and as the Australian representative, Kerri chose lamingtons.

Lamingtons are an Australian delicacy, made up of cubes of sponge cake dipped in dilute chocolate icing and then rolled in dessicated coconut to give a mottled white and brown appearance.

I was roped in to provide the action shots.

In other news, I bought yet another gadget - a headset so that I can make Skype calls without having to speak into a microphone.

And good for you. I love Skype, use it with a headset, but up to now a wired one - the next will be Bluetooth and wireless.

Lamingtons

These are small sponge cakes cakes dipped in chocolate icing and covered with descicated coconut. For the cake, separte 4 eggs. Beat the egg whites until stiff. dd egg yolks,a cup of sugar and a few drops of vanilla essence. Mix together 3/4 cup cornflour, 1/4 cup of self-raising flour and 1 teaspoon of cream of tartar and fold thismixture into the egg and sugar mixture. Melt 1 tespoon of butter and mix with 2 Tablespoons of milk and gently stir this into thecake mix. Pour into a square 20 cm cake tin and bake at 180 C for about 20 minutes. The cake will shrink away from the side of the baking tin when it is cooked.

Turn the cake out of the tin. When it is cool cut it into 9 squares. Make chocolateicingby mixing 1 tespoon ofbutter with 1 heaped tablespoon of cocoa, 1 cup of icing sugar nd enough hotwater to make a liquid icing. Dip the squares into chocolate icing, covering all sides. Then dip in descicated coconut. Enjoy!.
